Tomato, Parmesan & Basil Salad

This is a lovely dish to have with fresh bread (above) or on toasted bread.

Serves 4-6

Ingredients:

8 ripe Normal Tomatoes

3 Cloves of Garlic (crushed)

Olive oil or Basil oil

Balsamic Vinegar

10 Fresh Basil Leaves Finely Chopped

1 Onion ( I used a red onion in the picture above but works best with white onion)

100g Grated Parmesan Cheese

Salt and Pepper

Method:

1. Chop the tomatoes and onions into very small pieces.

2. Mix the onions and tomatoes with the crushed garlic, parmesan cheese and basil

3. Add a tbsp of Olive Oil (or basil oil) and a tbsp of Balsamic Vinegar.

4. Give all the ingredients and good stir and season with salt and pepper to taste!
