Prawn and Chorizo Jambalaya Recipe


Jambalaya is one of my favorite meals, unfortunately I cannot take credit for the picture but you have to try this meal its delicious.

Serves 4


150 g chorizo

2 small red chilli’s (Add one or two more if you prefer things hot!) sliced

1 Large Onion finely chopped

3 Cloves of Garlic

Fresh Thyme

250 grams long grain rice

200g tinned tomatoes, chopped

700ml stock (any)

Couple of drops of Tabasco sauce

200g Raw Tiger Prawns

1 Red Pepper ( I would usually leave this out of my recipe because of personal preference)


Step 1: Fry off the sliced chorizo in a pan for 3-4 minutes turning half way, then remove with a slotted spoon.

Step 2: Add the chilli’s, garlic, red pepper to the pan, stirring occasionally for 5 minutes.

Step 3: Stir in the thyme and rice for another minute and then add the tinned tomatoes, stock and tobasco.

Step 4: Bring the mixture to the boil, then reduce the heat, cover and simmer for about 12 minutes stirring occasionally until most of the liquid has evaporated.

Step 5: Stir and season to taste!
